Shrimp Scampi
Serves 8
2 pounds large shrimp, peeled, de-veined, and rinsed
4 garlic cloves, chopped fine or minced
4 tablespoons extra virgin olive oil
2 tablespoons lemon juice (1 lemon)
4 tablespoons fresh parsley, chopped fine
2 tablespoons Dirk’s Good Seasonings! Rattlesnake Salt
¼ teaspoon cayenne pepper
Heat the olive oil in a 10-to-12-inch frying pan over medium-high heat until the garlic begins to sizzle. Reduce the heat to medium-low and cook. Stir until the garlic begins to brown. Add the shrimp and increase the heat to medium. Stir the shrimp to even out their cooking. After cooking about 3 minutes and when the shrimp turn pink on the bottom, turn the shrimp to cook the other side. Cook an additional 2-3 minutes, but be careful no to overcook as the shrimp will then become tough.
Turn off the heat and add the lemon juice, parsley, Dirk’s Good Seasonings! Rattlesnake Salt, and a few dashes of cayenne pepper. Stir to combine.
Serve hot!
If this dish is prepared in a cast-iron frying pan or one that you are comfortable placing on plenty of hot pads on the center of your table, your guests can serve themselves and sop up the olive oil and garlic with hot French bread.
