Blackened Catfish

Catfish (approximately 1/3 pound per person)
Extra virgin olive oil 
1 tablespoon butter for every 2-4 servings

Rinse catfish in cold water and pat dry with paper towels. Lightly coat the catfish with olive oil and Dirk’s Good Seasonings! Savory Grilling Rub. Heat a cast-iron frying pan or oven-proof pan for several minutes on medium-high. Add the catfish and sear both sides for approximately 2 minutes. Transfer to a preheated 350° oven for 2 minutes more, with a little butter on top. 

Other fish, such as mahi mahi, tuna, halibut, orange roughy, tilapia, or even shrimp, can be substituted for the catfish with equally satisfactory results. A thicker fish requires more time. It really doesn’t take much butter at the end to provide the proper finish. It restores a little moistness and enhances the flavor.
